Ingredients
- 126 g chicken breast, cubed
- 1 teaspoon Cajun seasoning
- 2 teaspoons extra-virgin olive oil
- 250 g sweet potato, cubed
- 175 g broccoli florets
Instructions
- Preheat oven to 425°F (218°C). Toss cubed chicken with Cajun seasoning until evenly coated. Refrigerate for 15 minutes while prepping other ingredients.
- Line a sheet pan with foil and lightly spray with nonstick spray. Arrange sweet potatoes and broccoli on the pan, drizzle with olive oil, and sprinkle with salt.
- Prepare a second sheet pan for the chicken, lining and spraying it the same way.
- Bake both pans for 12–15 minutes. Remove the chicken and broccoli, stir the sweet potatoes, and continue roasting for another 15 minutes or until tender.
- Combine all components or serve separately. Enjoy!
Notes
- For extra flavor, add a squeeze of lime juice or a drizzle of hot honey before serving.
- Substitute Cajun seasoning with taco seasoning or smoked paprika for a milder version.
