Spicy Chicken and Sweet Potato

Ingredients

  • 126 g chicken breast, cubed
  • 1 teaspoon Cajun seasoning
  • 2 teaspoons extra-virgin olive oil
  • 250 g sweet potato, cubed
  • 175 g broccoli florets

Instructions

  1. Preheat oven to 425°F (218°C). Toss cubed chicken with Cajun seasoning until evenly coated. Refrigerate for 15 minutes while prepping other ingredients.
  2. Line a sheet pan with foil and lightly spray with nonstick spray. Arrange sweet potatoes and broccoli on the pan, drizzle with olive oil, and sprinkle with salt.
  3. Prepare a second sheet pan for the chicken, lining and spraying it the same way.
  4. Bake both pans for 12–15 minutes. Remove the chicken and broccoli, stir the sweet potatoes, and continue roasting for another 15 minutes or until tender.
  5. Combine all components or serve separately. Enjoy!

Notes

  • For extra flavor, add a squeeze of lime juice or a drizzle of hot honey before serving.
  • Substitute Cajun seasoning with taco seasoning or smoked paprika for a milder version.
