Ingredients
- 40 g brown rice
- 150 g shrimp
- 80 g pineapple, chopped
- 120 g red bell pepper, sliced
- 60 g red onion, sliced
- 2 teaspoons extra-virgin olive oil
- 1¼ teaspoons Cajun seasoning
- ¼ lime, juiced
Instructions
- Cook rice according to package instructions or in a rice cooker.
- Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
- Add shrimp, pineapple, bell pepper, and onion to the baking sheet. Drizzle with olive oil and sprinkle with Cajun seasoning. Toss to coat evenly, then spread into a single layer.
- Bake for 6–8 minutes, or until shrimp are cooked through. Remove shrimp from the baking sheet.
- Continue roasting the vegetables for another 6–8 minutes, until tender.
- Return shrimp to the pan, drizzle with lime juice, and toss to combine.
- Serve over rice and enjoy!
Notes
- Substitute mango for pineapple for a sweeter variation.
- Add extra Cajun seasoning or red pepper flakes if you prefer more heat.
