Ingredients

  • 40 g brown rice
  • 150 g shrimp
  • 80 g pineapple, chopped
  • 120 g red bell pepper, sliced
  • 60 g red onion, sliced
  • 2 teaspoons extra-virgin olive oil
  • 1¼ teaspoons Cajun seasoning
  • ¼ lime, juiced

Instructions

  1. Cook rice according to package instructions or in a rice cooker.
  2. Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper.
  3. Add shrimp, pineapple, bell pepper, and onion to the baking sheet. Drizzle with olive oil and sprinkle with Cajun seasoning. Toss to coat evenly, then spread into a single layer.
  4. Bake for 6–8 minutes, or until shrimp are cooked through. Remove shrimp from the baking sheet.
  5. Continue roasting the vegetables for another 6–8 minutes, until tender.
  6. Return shrimp to the pan, drizzle with lime juice, and toss to combine.
  7. Serve over rice and enjoy!

Notes

  • Substitute mango for pineapple for a sweeter variation.
  • Add extra Cajun seasoning or red pepper flakes if you prefer more heat.
