Ingredients
- 1 pound ground turkey
- 5 cloves garlic, minced and divided
- 1 large egg, beaten
- ½ cup freshly grated Parmesan cheese, plus more for garnish
- 2 tablespoons freshly chopped parsley
- ¼ teaspoon crushed red pepper flakes
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons extra-virgin olive oil
- 4 tablespoons butter
- 1 pound zucchini noodles (zoodles)
- Juice of ½ lemon
Instructions
- In a large bowl, combine ground turkey, 2 cloves garlic (about 2 teaspoons), egg, Parmesan, parsley, and red pepper flakes. Season with salt and pepper, then form into tablespoon-sized meatballs.
- In a large skillet over medium heat, heat olive oil and cook meatballs until golden and cooked through, about 10 minutes. Transfer to a plate and wipe out the skillet.
- Melt butter in the skillet and add remaining minced garlic. Cook until fragrant, about 1 minute. Add zoodles and toss with garlic butter and lemon juice. Return meatballs to the skillet and heat until warmed through.
- Garnish with additional Parmesan before serving.
Notes
- Substitute ground chicken or pork for turkey if desired.
- Avoid overcooking zoodles to prevent them from becoming watery.
- Best served immediately for optimal texture.
