Ingredients

  • 1 pound ground turkey
  • 5 cloves garlic, minced and divided
  • 1 large egg, beaten
  • ½ cup freshly grated Parmesan cheese, plus more for garnish
  • 2 tablespoons freshly chopped parsley
  • ¼ teaspoon crushed red pepper flakes
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons extra-virgin olive oil
  • 4 tablespoons butter
  • 1 pound zucchini noodles (zoodles)
  • Juice of ½ lemon

Instructions

  1. In a large bowl, combine ground turkey, 2 cloves garlic (about 2 teaspoons), egg, Parmesan, parsley, and red pepper flakes. Season with salt and pepper, then form into tablespoon-sized meatballs.
  2. In a large skillet over medium heat, heat olive oil and cook meatballs until golden and cooked through, about 10 minutes. Transfer to a plate and wipe out the skillet.
  3. Melt butter in the skillet and add remaining minced garlic. Cook until fragrant, about 1 minute. Add zoodles and toss with garlic butter and lemon juice. Return meatballs to the skillet and heat until warmed through.
  4. Garnish with additional Parmesan before serving.

Notes

  • Substitute ground chicken or pork for turkey if desired.
  • Avoid overcooking zoodles to prevent them from becoming watery.
  • Best served immediately for optimal texture.
