Ingredients

  • 1½ pounds sausage
  • 15 eggs
  • 10 button mushrooms, sliced
  • 20 cherry tomatoes, halved
  • 5-ounce container baby spinach
  • 2 cups shredded cheddar cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F.
  2. Heat a large sauté pan over high heat and brown the sausage. Add mushrooms and cook until browned, about 3 minutes. Add spinach and cook for 1 minute until wilted, then add cherry tomatoes, stir, and remove from heat.
  3. In a large bowl, whisk together eggs, salt, pepper, and cheese. Add the cooked sausage and vegetables and stir to combine.
  4. Line a deep baking dish with parchment paper. Pour the egg mixture into the dish and bake at 350°F for 40 minutes, or until fully cooked.
  5. Remove from oven and let cool for 20 minutes. Flip out of the pan, cut into 5 portions, and wrap for storage.
