- 1.5 lbs sausage
- 15 eggs
- 10 button mushrooms
- 20 cherry tomatoes
- 5 ounce container baby spinach
- 2 cups cheddar cheese
- Salt and pepper
- Preheat your oven to 350 degrees.
- Heat a large sautee pan on high heat and brown the sausage. Add the mushrooms and sautee until browned, about 3 minutes. Add the spinach and cook for an additional minute, until slightly browned, then add sliced cherry tomatoes, stir, and take off the heat.
- Whisk eggs, salt and pepper, and cheese together, then toss in your sausage and vegetables and whisk.
- Line a deep baking dish with parchment paper, then pour egg mixture on top, and bake at 350 degrees for 40 minutes, until cooked.
- Remove from oven, allow to cool for 20 minutes, then turn over, cut into 5 portions, and wrap.
