Ingredients
- 1½ pounds sausage
- 15 eggs
- 10 button mushrooms, sliced
- 20 cherry tomatoes, halved
- 5-ounce container baby spinach
- 2 cups shredded cheddar cheese
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F.
- Heat a large sauté pan over high heat and brown the sausage. Add mushrooms and cook until browned, about 3 minutes. Add spinach and cook for 1 minute until wilted, then add cherry tomatoes, stir, and remove from heat.
- In a large bowl, whisk together eggs, salt, pepper, and cheese. Add the cooked sausage and vegetables and stir to combine.
- Line a deep baking dish with parchment paper. Pour the egg mixture into the dish and bake at 350°F for 40 minutes, or until fully cooked.
- Remove from oven and let cool for 20 minutes. Flip out of the pan, cut into 5 portions, and wrap for storage.
