  1. Preheat your oven to 350 degrees.
  2. Heat a large sautee pan on high heat and brown the sausage. Add the mushrooms and sautee until browned, about 3 minutes. Add the spinach and cook for an additional minute, until slightly browned, then add sliced cherry tomatoes, stir, and take off the heat.
  3. Whisk eggs, salt and pepper, and cheese together, then toss in your sausage and vegetables and whisk.
  4. Line a deep baking dish with parchment paper, then pour egg mixture on top, and bake at 350 degrees for 40 minutes, until cooked.
  5. Remove from oven, allow to cool for 20 minutes, then turn over, cut into 5 portions, and wrap.
