Ingredients

  • 1 head cauliflower
  • 1 egg
  • ⅓ cup soft goat cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F.
  2. Steam the cauliflower until tender.
  3. Transfer the cauliflower to a food processor and pulse until it reaches a rice-like texture.
  4. Squeeze out as much excess moisture as possible using a clean towel or cheesecloth.
  5. In a large bowl, combine cauliflower, egg, goat cheese, Italian seasoning, salt, and pepper. Mix until fully combined.
  6. Spread the mixture onto a parchment-lined baking sheet, shaping it into a thin crust with a spatula or your hands.
  7. Bake for 30–35 minutes, until dry and golden.
  8. Remove from oven, flip the crust, add your favorite toppings, and bake for an additional 7–10 minutes or until desired crispness is achieved.
